Ding Dong Ding Dong, Christmas is here (almost, not really, one more day...)


Tonight we're taking an excursion to see the Christmas lights in Kapolei! My baby just loves the sparkly lights. While we were on Kauai we took a sparkly light tour around the block to see all the decked out houses. On the way we got to see the traditional Kilauea Christmas carolers singing merry tunes out of the back of a truck with Santa handing out candy to the keiki. It was nice to be home and see some of the things that make it so great.

Eva was asking me for soup this morning so that's what you'll be getting today. A rich, full flavor butternut squash soup. Get your blender ready.

Creamy Vegetarian Squash and Leek Soup With Mushrooms and Sage
Ingredients
  • 1 large butternut squash, peeled, cleaned, and cubed
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tbs butter
  • 2 leeks, sliced
  • 2 cups vegetable broth
  • 2 cups milk
  • 1 package of button mushrooms, sliced
  • Bunch of sage
  • 1 tsp paprika
  • 1/2 tsp celery salt
  • salt to taste
  • heavy whipping cream to garnish
Directions
  1. Melt the butter in a soup pot and add the sage. Toss in the onions with a pinch of salt and let sweat then add the garlic
  2. When the onions start to turn translucent add the leeks, give a stir then add the squash, paprika, and celery salt. Stir to combine everything
  3. Pour in the vegetable stalk and milk (you can replace the milk with more stalk if you have milk allergies). Bring to a boil, reduce to a simmer and put the lid on the pot
  4. If you're using whole milk you may get some curds at the top, go ahead and scrape that off and discard
  5. After 15-20 minutes, or when the squash is soft, remove the sage and pour 1/2 soup or more (depending on how creamy you like it, I like mine with a little texture) in a blender till it's creamy. Add back into the soup pot
  6. Turn the heat back up and add the mushrooms to the soup for a couple minutes till they're cooked
  7. Ladle into bowls and garnish with swirls of heavy whipping cream

And there you have it. A hearty, flavorful soup without bloodshed. The animals are happy, you're happy, I'm happy, everyone's happy. Except those damn vegans.
