So while shopping at Costco I picked up this greek yogurt dip (jalapeno flavor). It's thick and similar to the texture of a cream cheese dip. But wait! I have no bread. What am I going to use this for in my gluten-free weekdays?
Cue the peas, please-

Now that I have a full stomach I'm able to think better and therefore post. I think one more day and the change in our diet will get easier. Having a kid is a good motivation to change your lifestyle.
This grain-free thing is harder than we thought (in fact, Siah broke yesterday while I was at work- that butt!). When I got home me and Siah were HUNGRAY so I was very liberal with my ingredients. Feel free to tone it down where you feel necessary.

Green Pea Greek Yogurt Salad
Ingredients
  • 3 cups green peas
  • 1 cup cheddar cheese
  • 3/4 cup Greek Yogurt Dip (flavor of your choice, mine was jalapeno)
  • 1/2 an onion, minced fine
  • Garlic salt, to taste
Directions
  1. Boil the peas for about 1-2 minutes (it's more to thaw them out than to cook them). Run the peas under cold water while draining. Once all the liquid is drained add them to a large mixing bowl.
  2. Add all the other ingredients till everything is incorporated.
Now it's ready to fill your belly!
