Yes, yes cake mix cookies. Wait, what? Spice chocolate cake mix cookies? In bars? Yes!
Well I just turned 28 and had a backyard BBQ for my bday. I also had the good sense to go after a 2-for-1 cake mix because guess what? I didn't get to eat my own cake. Right after blowing out my candles I had to blow outta there.
Nice right? Me and the hubby were feeling pretty proud of ourselves for doing it up right. We were all enjoying ourselves. My parents had flown over from Kauai. Our friend, Rex brought us real Swiss chocolate from Switzerland and real Irish Guinness from Ireland (totally awesome!)
I was gripped by the FLAVOR!
Everything was great. My Mom brought out the cake. Everyone sang "Happy Birthday." I made a wish and blew out the candles. Then this happened-
That's Eva in a hospital bed in the ER. She had an allergic reaction to who knows what. After my Mom started cutting the cake, Eva's eye swelled up like a mule kicked her and her entire left side of her body was covered in hives. We rushed her to the ER and they gave her some Benadryl. She instantly started to look better and we went right back to partying in our backyard (no case of itchies or sleepy medication is gonna stop this one!).
So I figured in order to complete my birthday wish some belated "cake" is in order. It's super easy, Eva helped me make it. Let's get on with it.
Cake Mix Cookie Bars Recipe
- 1 box spice cake mix
- 1/2 cup coconut oil (or any oil)
- 2 eggs
- handful of chocolate chips (to taste)
- Preheat oven to 350F
- Dump cake mix into a large mixing bowl and mix in the chocolate chips
- Measure oil, mix in the eggs, dump into cake mix, mix it up
- Grease cake pan (I used a spring form) and dump mixed up cake mix in that thing. Spread that shit
- Pop it in the oven for 10 minutes. Let cool then cut into squares
And you know what? After having a bit of my "cake" I'm already starting to feel like this year will be getting better.
