Caprese Chicken Salad Recipe

Ingredients
  • 8 boneless skinless chicken thighs
  • 1/2 cup balsamic vinegar
  • 2 tablespoons vegetable oil (or olive)
  • 3 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 bunch of basil, stems removed 
  • 2 tomatoes, sliced
  • 1 bag shredded mozzarella cheese
Directions
  1. Marinate the chicken in the balsamic vinegar, vegetable oil, dried oregano, salt, black pepper 4-6 hours or overnight 
  2. Cook the chicken on the stove top in the sauce it was marinated in
  3. Preheat oven to 375 F
  4. Once fully cooked transfer chicken to a baking dish while saving the marinade. Place a large basil leaf then a tomato slice over each chicken thigh. Top with a generous pinch of shredded mozzarella 
  5. Place baking dish in the oven and cook until cheese is melted
  6. While baking the chicken you can cook down the balsamic marinade to create a sauce by letting it summer on the stove till it thickens. Spoon the grease from the top. Serve with the chicken
